Dinner Recipes


LAMB SHANK SOUP


Ingredients:

2 lamb shanks

2 Tbp olive oil

1 brwn onion

½ leek

4 cloves garlic

3 tsps of seasalt

1L of chicken stock

1L of bone broth

1L water

2 carrots grated

3 sticks celery

½ zucchini grated

3 inch chunk of sweet potato or pumpkin

1large peeled potato (cut into small cubes)



QUINOA ROAST VEGETABLE SALAD

This salad is full of nutrients and has a good dose of protein from the quinoa. Make a batch and store it in the fridge to enjoy for up to three days as a super healthy lunch or as a side for dinner.


Ingredients:

1 cup of quinoa (rinsed)

500 ml of vegetable stock

1 teaspoon sea salt

1 medium zucchini (chopped into small cubes)

1 sweet potato (chopped into small cubes)

1 red capsicum (chopped into 3-inch chunks)

1 purple onion (sliced)

1 lemon (cut into triangles)

½ tsp chilli flakes (optional)

3 garlic cloves or 1 tsp garlic powder

3 Tbsp olive oil

Pepper

 

Method:

1.     Rince quinoa and place into a pot with the vegetable stock and ½ teaspoon of salt. Cook for 15mins adding a small amount of extra water if all the stock gets absorbed.

2.     Chop all vegetables and lemon and place them onto baking paper on an oven tray.

3.     Add 2 Tbsp olive oil and seasonings. Mix to combine.

4.     Place in oven 180 degrees for 40mins

5.     When vegetables are cooked take out the cooked lemon, and squeeze the juice into the cooked quinoa.

6.     Mix the vegetables through the quinoa and add 1 Tbsp of added olive oil, extra lemon juice, and seasoning to your liking.
